Ingredients

  • 500g chicken breast, cut into cubes
  • 4 large potatoes, peeled and sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the chicken cubes and cook until browned on all sides. Remove the chicken from the skillet and set aside.
  3. In the same skillet, sauté the onion and garlic until softened.
  4. Layer half of the sliced potatoes in a greased baking dish. Top with the cooked chicken.
  5. In a bowl, mix the sour cream and chicken broth. Pour half of this mixture over the chicken and potatoes in the baking dish.
  6. Layer the remaining potatoes on top, then pour the remaining sour cream mixture over the potatoes.
  7. Sprinkle the shredded mozzarella cheese over the top.
  8. Cover the baking dish with foil and bake for 45 minutes. Then uncover and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
  9. Let the casserole rest for 5-10 minutes before serving.
