Creamy Catalan-style Saffron Rice (Arroz con Azafrán a la Catalana)
Arroz con Azafrán a la Catalana, or Creamy Catalan-style Saffron Rice, is a traditional dish from the Catalonia region of Spain. This rich and flavorful rice dish is infused with the warm, earthy notes of saffron and is a perfect accompaniment to a variety of Spanish dishes.
Ingredients
- 2 cups of short-grain rice
- 4 cups of vegetable broth
- 1/2 teaspoon of saffron threads
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1/4 cup of white wine
- 1/2 cup of grated Manchego cheese
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a small bowl, steep the saffron threads in the white wine for 10 minutes.
- In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Stir in the rice and cook for 2 minutes, stirring constantly.
- Pour in the saffron-infused white wine and stir until the liquid is absorbed.
- Gradually add the vegetable broth, 1/2 cup at a time, stirring frequently and allowing the liquid to be absorbed before adding more.
- Once the rice is tender and creamy, stir in the grated Manchego cheese and season with salt and pepper.
- Remove from heat and let the rice rest for 5 minutes before serving.
