Creamy Catalan-style Saffron Rice (Arroz con Azafrán a la Catalana)

Ingredients

  • 2 cups of short-grain rice
  • 4 cups of vegetable broth
  • 1/2 teaspoon of saffron threads
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/4 cup of white wine
  • 1/2 cup of grated Manchego cheese
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. In a small bowl, steep the saffron threads in the white wine for 10 minutes.
  2. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  3. Stir in the rice and cook for 2 minutes, stirring constantly.
  4. Pour in the saffron-infused white wine and stir until the liquid is absorbed.
  5. Gradually add the vegetable broth, 1/2 cup at a time, stirring frequently and allowing the liquid to be absorbed before adding more.
  6. Once the rice is tender and creamy, stir in the grated Manchego cheese and season with salt and pepper.
  7. Remove from heat and let the rice rest for 5 minutes before serving.
