Creamy Chicken (aji De Gallina)

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 4 aji amarillo peppers, seeded and deveined
  • 1 cup walnuts
  • 4 slices white bread, crusts removed
  • 2 cups chicken broth
  • 1 cup evaporated milk
  • 1/2 cup grated parmesan cheese
  • 4 boiled eggs, sliced
  • 4 boiled yellow potatoes, sliced
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, poach the chicken breasts in water until fully cooked. Remove the chicken from the pot and let it cool. Shred the chicken into small pieces and set aside.
  2. In a blender, combine the aji amarillo peppers, walnuts, bread, and 1 cup of chicken broth. Blend until smooth.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  4. Add the aji amarillo mixture to the skillet and cook for 5 minutes, stirring constantly.
  5. Add the shredded chicken, remaining chicken broth, and evaporated milk to the skillet. Stir to combine and let the mixture simmer for 10 minutes.
  6. Stir in the grated parmesan cheese until melted and well combined. Season with salt and pepper to taste.
  7. To serve, place a portion of the creamy chicken over a bed of sliced boiled potatoes. Garnish with sliced boiled eggs and drizzle with additional sauce if desired.
