Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 onion, chopped
- 4 garlic cloves, minced
- 4 aji amarillo peppers, seeded and deveined
- 1 cup walnuts
- 4 slices white bread, crusts removed
- 2 cups chicken broth
- 1 cup evaporated milk
- 1/2 cup grated parmesan cheese
- 4 boiled eggs, sliced
- 4 boiled yellow potatoes, sliced
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, poach the chicken breasts in water until fully cooked. Remove the chicken from the pot and let it cool. Shred the chicken into small pieces and set aside.
- In a blender, combine the aji amarillo peppers, walnuts, bread, and 1 cup of chicken broth. Blend until smooth.
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until the onion is translucent.
- Add the aji amarillo mixture to the skillet and cook for 5 minutes, stirring constantly.
- Add the shredded chicken, remaining chicken broth, and evaporated milk to the skillet. Stir to combine and let the mixture simmer for 10 minutes.
- Stir in the grated parmesan cheese until melted and well combined. Season with salt and pepper to taste.
- To serve, place a portion of the creamy chicken over a bed of sliced boiled potatoes. Garnish with sliced boiled eggs and drizzle with additional sauce if desired.
