Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 8 ounces mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 2 sheets of store-bought puff pastry, thawed

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the diced onion and sliced mushrooms. Cook until the vegetables are softened, then add the minced garlic and cook for an additional minute.
  3. Sprinkle the flour over the vegetables and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
  4. Gradually pour in the chicken broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until thickened.
  5. Stir in the heavy cream and season the sauce with salt and pepper to taste. Add the cooked chicken back into the skillet and stir to combine.
  6. Preheat the oven to 400°F (200°C). Roll out one sheet of puff pastry and line a pie dish with it. Pour the chicken and mushroom filling into the pastry-lined dish.
  7. Roll out the second sheet of puff pastry and place it over the filling. Trim any excess pastry and crimp the edges to seal the pie.
  8. Make a few slits in the top of the pastry to allow steam to escape during baking.
  9. Bake the pie for 30-35 minutes, or until the pastry is golden brown and the filling is bubbling.
  10. Let the pie cool for a few minutes before slicing and serving.
