Ingredients
- 1 pound boneless, skinless chicken breasts, diced
- 2 tablespoons olive oil
- 1 onion, diced
- 8 ounces mushrooms, sliced
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- 2 sheets of store-bought puff pastry, thawed
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and sliced mushrooms. Cook until the vegetables are softened, then add the minced garlic and cook for an additional minute.
- Sprinkle the flour over the vegetables and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually pour in the chicken broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until thickened.
- Stir in the heavy cream and season the sauce with salt and pepper to taste. Add the cooked chicken back into the skillet and stir to combine.
- Preheat the oven to 400°F (200°C). Roll out one sheet of puff pastry and line a pie dish with it. Pour the chicken and mushroom filling into the pastry-lined dish.
- Roll out the second sheet of puff pastry and place it over the filling. Trim any excess pastry and crimp the edges to seal the pie.
- Make a few slits in the top of the pastry to allow steam to escape during baking.
- Bake the pie for 30-35 minutes, or until the pastry is golden brown and the filling is bubbling.
- Let the pie cool for a few minutes before slicing and serving.
