Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 1/2 cup white wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken breasts and cook for 6-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the sliced onions and cook over medium heat until caramelized, about 10 minutes.
  5. Pour in the white wine and cook for 2 minutes, scraping up any browned bits from the bottom of the skillet.
  6. Add the chicken broth and bring to a simmer. Cook for 5 minutes.
  7. Stir in the heavy cream and return the chicken breasts to the skillet. Simmer for another 5 minutes until the sauce thickens slightly.
  8. Serve the creamy chicken Lyonnaise hot, with the caramelized onions and sauce spooned over the chicken.
