Creamy Chickpea Soup (Nohut Çorbası)

Ingredients

  • 2 cups dried chickpeas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup heavy cream

Instructions

  1. Soak the dried chickpeas in water overnight.
  2. In a large pot, sauté the onion and garlic until fragrant.
  3. Add the carrots and celery, and cook for a few minutes.
  4. Drain the soaked chickpeas and add them to the pot.
  5. Pour in the vegetable broth and season with cumin, paprika, salt, and pepper.
  6. Cover and simmer for 45 minutes, or until the chickpeas are tender.
  7. Using an immersion blender, blend the soup until smooth.
  8. Stir in the heavy cream and heat through.
  9. Adjust seasoning if needed and serve hot.
