Ingredients
- 2 cups dried chickpeas
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup heavy cream
Instructions
- Soak the dried chickpeas in water overnight.
- In a large pot, sauté the onion and garlic until fragrant.
- Add the carrots and celery, and cook for a few minutes.
- Drain the soaked chickpeas and add them to the pot.
- Pour in the vegetable broth and season with cumin, paprika, salt, and pepper.
- Cover and simmer for 45 minutes, or until the chickpeas are tender.
- Using an immersion blender, blend the soup until smooth.
- Stir in the heavy cream and heat through.
- Adjust seasoning if needed and serve hot.
