Creamy Cucumber Soup (Salatalık Çorbası)

Ingredients

  • 4 large cucumbers, peeled and diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup plain yogurt
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the diced cucumbers to the pot and sauté for a few minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes, or until the cucumbers are tender.
  4. Remove the pot from the heat and let the soup cool slightly. Then, using an immersion blender, blend the soup until smooth.
  5. Stir in the plain yogurt and season with salt and pepper to taste.
  6. Return the pot to the stove and heat the soup gently, but do not let it boil.
  7. Once heated through, remove the soup from the stove and ladle it into serving bowls.
  8. Garnish with fresh dill and serve the creamy cucumber soup hot or chilled.
