Creamy Cucumber Soup (Salatalık Çorbası)
Salatalık Çorbası, or Creamy Cucumber Soup, is a traditional Gagauz cuisine dish that is perfect for hot summer days. This refreshing and light soup is easy to make and bursting with fresh flavors.
Ingredients
- 4 large cucumbers, peeled and diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup plain yogurt
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the diced cucumbers to the pot and sauté for a few minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes, or until the cucumbers are tender.
- Remove the pot from the heat and let the soup cool slightly. Then, using an immersion blender, blend the soup until smooth.
- Stir in the plain yogurt and season with salt and pepper to taste.
- Return the pot to the stove and heat the soup gently, but do not let it boil.
- Once heated through, remove the soup from the stove and ladle it into serving bowls.
- Garnish with fresh dill and serve the creamy cucumber soup hot or chilled.
