Ingredients
- 4 large dill pickles, finely chopped
- 4 cups vegetable broth
- 2 cups potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup sour cream
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onions and garlic, and sauté until the onions are translucent.
- Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
- In a small bowl, whisk together the sour cream and flour until smooth. Gradually stir in a ladleful of the hot broth from the pot to temper the sour cream mixture.
- Pour the tempered sour cream mixture into the pot, stirring constantly. Add the chopped dill pickles and simmer for an additional 10 minutes.
- Season the soup with salt and pepper to taste. Serve hot and enjoy!
