Creamy Dill Potatoes (Krämiga Dillpotatisar)

Ingredients

  • 1.5 lbs (700g) Yukon Gold potatoes, peeled and cubed
  • 1 cup (240ml) vegetable broth
  • 1/2 cup (120ml) heavy cream
  • 2 tbsp (30g) butter
  • 2 tbsp (30g) all-purpose flour
  • 2 tbsp (30g) fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the vegetable broth to a boil.
  2. Add the cubed potatoes to the boiling broth and cook for 15-20 minutes, or until the potatoes are tender.
  3. In a separate saucepan, melt the butter over medium heat. Stir in the flour to create a roux.
  4. Gradually whisk in the heavy cream until the sauce is smooth and thickened.
  5. Stir in the chopped dill and season the sauce with salt and pepper to taste.
  6. Once the potatoes are cooked, drain any excess broth and gently fold the creamy dill sauce into the potatoes until well coated.
  7. Transfer the creamy dill potatoes to a serving dish and garnish with additional dill, if desired. Serve hot and enjoy!
