Ingredients
- 1.5 lbs (700g) Yukon Gold potatoes, peeled and cubed
- 1 cup (240ml) vegetable broth
- 1/2 cup (120ml) heavy cream
- 2 tbsp (30g) butter
- 2 tbsp (30g) all-purpose flour
- 2 tbsp (30g) fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, bring the vegetable broth to a boil.
- Add the cubed potatoes to the boiling broth and cook for 15-20 minutes, or until the potatoes are tender.
- In a separate saucepan, melt the butter over medium heat. Stir in the flour to create a roux.
- Gradually whisk in the heavy cream until the sauce is smooth and thickened.
- Stir in the chopped dill and season the sauce with salt and pepper to taste.
- Once the potatoes are cooked, drain any excess broth and gently fold the creamy dill sauce into the potatoes until well coated.
- Transfer the creamy dill potatoes to a serving dish and garnish with additional dill, if desired. Serve hot and enjoy!
