Creamy Fabada Asturiana
Creamy Fabada Asturiana is a traditional Spanish bean stew hailing from the region of Asturias. This hearty and flavorful dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 1 lb dried white beans
- 4 chorizo sausages
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tsp sweet paprika
- 1/2 tsp saffron threads
- 6 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- Soak the dried white beans in water overnight.
- In a large pot, cook the chorizo sausages until browned. Remove and set aside.
- Sauté the onion and garlic in the same pot until softened.
- Add the soaked beans, bay leaves, paprika, saffron, and broth to the pot.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until the beans are tender.
- Slice the cooked chorizo and add it back to the pot. Season with salt and pepper.
- Simmer for an additional 15 minutes to let the flavors meld.
- Remove the bay leaves before serving.
