Creamy Fabada Asturiana

Ingredients

  • 1 lb dried white beans
  • 4 chorizo sausages
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp sweet paprika
  • 1/2 tsp saffron threads
  • 6 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. Soak the dried white beans in water overnight.
  2. In a large pot, cook the chorizo sausages until browned. Remove and set aside.
  3. Sauté the onion and garlic in the same pot until softened.
  4. Add the soaked beans, bay leaves, paprika, saffron, and broth to the pot.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until the beans are tender.
  6. Slice the cooked chorizo and add it back to the pot. Season with salt and pepper.
  7. Simmer for an additional 15 minutes to let the flavors meld.
  8. Remove the bay leaves before serving.
