Creamy Fish and Mushroom Pasta (Fiskapasta við Svampum)

Ingredients

  • 400g pasta
  • 500g white fish fillets
  • 250g mushrooms, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Boil the pasta according to package instructions. Drain and set aside.
  2. Season the fish fillets with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the fish fillets and cook until golden brown on both sides. Remove the fish from the skillet and set aside.
  3. In the same skillet, melt the butter and sauté the onions and garlic until softened. Add the sliced mushrooms and cook until they release their juices.
  4. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  5. Gently place the cooked fish fillets back into the skillet, spooning the creamy mushroom sauce over them. Simmer for a few minutes until the fish is heated through.
  6. Serve the creamy fish and mushroom sauce over the cooked pasta. Enjoy!
