Creamy Fish and Mushroom Pasta (Fiskapasta við Svampum)
Fiskapasta við Svampum, or Creamy Fish and Mushroom Pasta, is a classic dish from Faroese cuisine that combines the richness of fish with the earthy flavors of mushrooms in a creamy pasta sauce.
Ingredients
- 400g pasta
- 500g white fish fillets
- 250g mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Boil the pasta according to package instructions. Drain and set aside.
- Season the fish fillets with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the fish fillets and cook until golden brown on both sides. Remove the fish from the skillet and set aside.
- In the same skillet, melt the butter and sauté the onions and garlic until softened. Add the sliced mushrooms and cook until they release their juices.
- Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
- Gently place the cooked fish fillets back into the skillet, spooning the creamy mushroom sauce over them. Simmer for a few minutes until the fish is heated through.
- Serve the creamy fish and mushroom sauce over the cooked pasta. Enjoy!
