Creamy Gower Risotto
Creamy Gower Risotto is a classic Italian dish with a Gower twist. This creamy and indulgent risotto is perfect for a cozy night in or a special dinner with friends and family.
Ingredients
- 1 1/2 cups Arborio rice
- 4 cups vegetable broth
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
- 1/4 cup unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large saucepan, heat the vegetable broth over medium heat.
- In a separate large skillet, melt the butter over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the Arborio rice to the skillet and stir to coat with the butter, onion, and garlic mixture. Cook for 2 minutes.
- Pour in the white wine and cook, stirring constantly, until the wine is absorbed by the rice.
- Begin adding the warm vegetable broth to the skillet, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
- Continue this process until the rice is creamy and tender, about 20-25 minutes.
- Stir in the grated Parmesan cheese, heavy cream, salt, and black pepper. Cook for an additional 2-3 minutes until the risotto is creamy and heated through.
- Remove from heat and let the risotto rest for a few minutes before serving.
