Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups vegetable broth
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large saucepan, heat the vegetable broth over medium heat.
  2. In a separate large skillet, melt the butter over medium heat. Add the chopped onion and garlic, and cook until softened.
  3. Add the Arborio rice to the skillet and stir to coat with the butter, onion, and garlic mixture. Cook for 2 minutes.
  4. Pour in the white wine and cook, stirring constantly, until the wine is absorbed by the rice.
  5. Begin adding the warm vegetable broth to the skillet, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
  6. Continue this process until the rice is creamy and tender, about 20-25 minutes.
  7. Stir in the grated Parmesan cheese, heavy cream, salt, and black pepper. Cook for an additional 2-3 minutes until the risotto is creamy and heated through.
  8. Remove from heat and let the risotto rest for a few minutes before serving.
