Creamy Hazaragi Lentil Soup (Aash-e Adas)
Aash-e Adas is a traditional creamy Hazaragi lentil soup that is both nutritious and comforting. This hearty soup is a staple in Hazaragi cuisine and is perfect for warming up on a cold day.
Ingredients
- 1 cup red lentils
- 6 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 cup rice
- 1/2 cup chopped fresh cilantro
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Rinse the lentils and place them in a large pot with the vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- In a separate pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Stir in the turmeric and cumin, then add this mixture to the pot of lentils.
- Add the rice to the pot and continue to simmer for an additional 20 minutes, or until the rice is cooked.
- Stir in the chopped cilantro and season with salt and pepper to taste.
- Serve hot and enjoy!
