Creamy Hazaragi Lentil Soup (Aash-e Adas)

Ingredients

  • 1 cup red lentils
  • 6 cups vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 cup rice
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse the lentils and place them in a large pot with the vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  2. In a separate pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the turmeric and cumin, then add this mixture to the pot of lentils.
  4. Add the rice to the pot and continue to simmer for an additional 20 minutes, or until the rice is cooked.
  5. Stir in the chopped cilantro and season with salt and pepper to taste.
  6. Serve hot and enjoy!
