Creamy Lentil and Vegetable Soup (Nohutlu Sebze Çorbası)

Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 cup chickpeas, cooked
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the diced carrots and cubed potatoes to the pot. Cook for 5 minutes, stirring occasionally.
  3. Stir in the rinsed red lentils, cooked chickpeas, vegetable broth, cumin, paprika, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the lentils and vegetables are tender.
  4. Once the soup is cooked, use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  5. Return the blended soup to the pot and stir in the heavy cream. Cook for an additional 5 minutes, allowing the flavors to meld together.
  6. Adjust the seasoning if needed, then remove the soup from the heat.
  7. Serve the creamy lentil and vegetable soup hot, garnished with a drizzle of olive oil, a sprinkle of paprika, and fresh herbs if desired.
