Creamy Lentil and Vegetable Soup (Nohutlu Sebze Çorbası)
Nohutlu Sebze Çorbası, also known as Creamy Lentil and Vegetable Soup, is a traditional dish from Crimean Tatar cuisine. This hearty and nutritious soup is packed with flavors and perfect for a comforting meal.
Ingredients
- 1 cup red lentils, rinsed
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 cup chickpeas, cooked
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup heavy cream
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced carrots and cubed potatoes to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the rinsed red lentils, cooked chickpeas, vegetable broth, cumin, paprika, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the lentils and vegetables are tender.
- Once the soup is cooked, use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Return the blended soup to the pot and stir in the heavy cream. Cook for an additional 5 minutes, allowing the flavors to meld together.
- Adjust the seasoning if needed, then remove the soup from the heat.
- Serve the creamy lentil and vegetable soup hot, garnished with a drizzle of olive oil, a sprinkle of paprika, and fresh herbs if desired.
