Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 tablespoon olive oil
- 1/2 cup finely chopped chorizo
- 1/2 cup finely chopped onion
- 1/2 cup grated Manchego cheese
- 1/4 cup cream cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 375°F (190°C).
- Place the mushroom caps on a baking sheet.
- Chop the reserved mushroom stems.
- In a skillet, heat the olive oil over medium heat.
- Add the chopped mushroom stems, chorizo, and onion. Cook until the chorizo is browned and the onion is softened.
- Remove the skillet from the heat and let it cool slightly.
- In a bowl, combine the cooked chorizo mixture, Manchego cheese, cream cheese, garlic, salt, and pepper.
- Spoon the mixture into the mushroom caps.
- Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden and bubbly.
- Sprinkle with chopped parsley before serving.
