Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 1/2 cup finely chopped chorizo
  • 1/2 cup finely chopped onion
  • 1/2 cup grated Manchego cheese
  • 1/4 cup cream cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the mushroom caps on a baking sheet.
  3. Chop the reserved mushroom stems.
  4. In a skillet, heat the olive oil over medium heat.
  5. Add the chopped mushroom stems, chorizo, and onion. Cook until the chorizo is browned and the onion is softened.
  6. Remove the skillet from the heat and let it cool slightly.
  7. In a bowl, combine the cooked chorizo mixture, Manchego cheese, cream cheese, garlic, salt, and pepper.
  8. Spoon the mixture into the mushroom caps.
