Creamy Mushroom And Spinach Lasagna

Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 10 oz fresh spinach
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions, then drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  4. Add the sliced mushrooms and cook until they release their liquid and become tender.
  5. Add the fresh spinach to the skillet and cook until wilted. Remove from heat and set aside.
  6. In a bowl, combine the ricotta cheese, Parmesan cheese, oregano, salt, and black pepper.
  7. Spread 1/2 cup of marinara sauce in the bottom of a 9x13 inch baking dish.
  8. Place 3 lasagna noodles on top of the sauce.
  9. Spread half of the ricotta mixture over the noodles, then half of the mushroom and spinach mixture, and 1/2 cup of mozzarella cheese.
  10. Repeat the layers with marinara sauce, lasagna noodles, ricotta mixture, mushroom and spinach mixture, and mozzarella cheese.
  11. Top with the remaining 3 lasagna noodles, marinara sauce, and mozzarella cheese.
  12. Cover the baking dish with foil and bake for 25 minutes. Then remove the foil and bake for an additional 20 minutes, or until the cheese is bubbly and golden.
  13. Let the lasagna rest for 10 minutes before slicing and serving.
