Creamy Mushroom And Spinach Lasagna

Ingredients
- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 10 oz fresh spinach
- 2 cups ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups marinara sauce
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the sliced mushrooms and cook until they release their liquid and become tender.
- Add the fresh spinach to the skillet and cook until wilted. Remove from heat and set aside.
- In a bowl, combine the ricotta cheese, Parmesan cheese, oregano, salt, and black pepper.
- Spread 1/2 cup of marinara sauce in the bottom of a 9x13 inch baking dish.
- Place 3 lasagna noodles on top of the sauce.
- Spread half of the ricotta mixture over the noodles, then half of the mushroom and spinach mixture, and 1/2 cup of mozzarella cheese.
- Repeat the layers with marinara sauce, lasagna noodles, ricotta mixture, mushroom and spinach mixture, and mozzarella cheese.
- Top with the remaining 3 lasagna noodles, marinara sauce, and mozzarella cheese.
- Cover the baking dish with foil and bake for 25 minutes. Then remove the foil and bake for an additional 20 minutes, or until the cheese is bubbly and golden.
- Let the lasagna rest for 10 minutes before slicing and serving.
