Creamy Mushroom and Spinach Pasta (Mantarlı Ispanaklı Makarna)
Mantarlı Ispanaklı Makarna, or Creamy Mushroom and Spinach Pasta, is a delicious Crimean Tatar dish that combines the earthy flavors of mushrooms with the freshness of spinach in a creamy pasta sauce.
Ingredients
- 300g pasta
- 200g mushrooms, sliced
- 2 cups fresh spinach
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot of boiling salted water, cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the mushrooms to the skillet and cook until they release their moisture and become golden brown.
- Stir in the spinach and cook until wilted.
- Pour in the heavy cream and bring to a simmer. Add the cooked pasta and Parmesan cheese, stirring until the pasta is coated with the creamy sauce.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional Parmesan cheese if desired.
