Creamy Mushroom and Spinach Pasta (Mantarlı Ispanaklı Makarna)

Ingredients

  • 300g pasta
  • 200g mushrooms, sliced
  • 2 cups fresh spinach
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot of boiling salted water, cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.
  3. Add the mushrooms to the skillet and cook until they release their moisture and become golden brown.
  4. Stir in the spinach and cook until wilted.
  5. Pour in the heavy cream and bring to a simmer. Add the cooked pasta and Parmesan cheese, stirring until the pasta is coated with the creamy sauce.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with additional Parmesan cheese if desired.
