Creamy Mushroom and Spinach Soup (Şorba)

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the sliced mushrooms to the pot and cook until they release their liquid and become golden brown.
  3. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for 15 minutes.
  4. Stir in the heavy cream and fresh spinach, and let the soup simmer for an additional 5 minutes.
  5. Season with salt and pepper to taste.
