Creamy Mushroom and Spinach Soup (Şorba)
Şorba is a traditional Azerbaijani creamy mushroom and spinach soup that is perfect for a cozy night in. This rich and flavorful soup is easy to make and is sure to warm you up on a cold day.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the sliced mushrooms to the pot and cook until they release their liquid and become golden brown.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for 15 minutes.
- Stir in the heavy cream and fresh spinach, and let the soup simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve the creamy mushroom and spinach soup hot, garnished with a drizzle of cream and a sprinkle of fresh herbs if desired.
