Creamy Mushroom Biryani
Creamy Mushroom Biryani is a delicious and aromatic rice dish from Tamil Cuisine, packed with the earthy flavors of mushrooms and a creamy texture that will leave you craving for more.
Ingredients
- 2 cups basmati rice
- 1 cup sliced mushrooms
- 1 onion, thinly sliced
- 1 tomato, chopped
- 1/2 cup plain yogurt
- 1/4 cup cashews
- 2 tbsp ghee
- 1 cinnamon stick
- 4 cloves
- 2 cardamom pods
- 1 tsp cumin seeds
- 1 tsp turmeric
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Wash and soak the basmati rice for 30 minutes, then drain.
- In a large pot, heat ghee and add the cinnamon, cloves, cardamom, and cumin seeds. Sauté until fragrant.
- Add the sliced onions and sauté until golden brown.
- Add the chopped tomatoes and cook until they turn mushy.
- Add the sliced mushrooms and cook for 5 minutes.
- Stir in the turmeric, red chili powder, and garam masala.
- Add the drained rice and sauté for 2 minutes.
- Whisk the yogurt with a little water and pour it into the pot.
- Add salt to taste and mix well.
- Add 3 cups of water, bring to a boil, then reduce the heat, cover, and cook for 15 minutes or until the rice is tender.
- While the rice is cooking, grind the cashews with a little water to form a smooth paste.
- Once the rice is cooked, gently fold in the cashew paste and let it simmer for 5 minutes.
- Garnish with fresh cilantro and serve hot.
