Creamy Mushroom Biryani

Ingredients

  • 2 cups basmati rice
  • 1 cup sliced mushrooms
  • 1 onion, thinly sliced
  • 1 tomato, chopped
  • 1/2 cup plain yogurt
  • 1/4 cup cashews
  • 2 tbsp ghee
  • 1 cinnamon stick
  • 4 cloves
  • 2 cardamom pods
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Wash and soak the basmati rice for 30 minutes, then drain.
  2. In a large pot, heat ghee and add the cinnamon, cloves, cardamom, and cumin seeds. Sauté until fragrant.
  3. Add the sliced onions and sauté until golden brown.
  4. Add the chopped tomatoes and cook until they turn mushy.
  5. Add the sliced mushrooms and cook for 5 minutes.
  6. Stir in the turmeric, red chili powder, and garam masala.
  7. Add the drained rice and sauté for 2 minutes.
  8. Whisk the yogurt with a little water and pour it into the pot.
  9. Add salt to taste and mix well.
  10. Add 3 cups of water, bring to a boil, then reduce the heat, cover, and cook for 15 minutes or until the rice is tender.
  11. While the rice is cooking, grind the cashews with a little water to form a smooth paste.
  12. Once the rice is cooked, gently fold in the cashew paste and let it simmer for 5 minutes.
  13. Garnish with fresh cilantro and serve hot.
