Creamy Mushroom Masala (ಅಣ್ಣಾರಿ ಮಸಾಲ)
Creamy Mushroom Masala is a delicious and creamy curry from Udupi Cuisine that is perfect for a comforting meal. This vegetarian dish is made with mushrooms cooked in a rich and creamy gravy, flavored with aromatic spices.
Ingredients
- 500g mushrooms, sliced
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1/2 cup cashew nuts, soaked
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 cup heavy cream
- 2 tbsp ghee (clarified butter) or oil
- Fresh coriander leaves for garnish
- Salt to taste
Instructions
- Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute. Then, add the pureed tomatoes and cook until the oil separates.
- Meanwhile, grind the soaked cashew nuts into a smooth paste.
- Add the sliced mushrooms to the pan and cook for 5 minutes.
- Now, add the cashew paste, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for another 5 minutes.
- Pour in the heavy cream and simmer for 2-3 minutes until the gravy thickens.
- Garnish with fresh coriander leaves and serve hot with naan or rice.
