Creamy Mushroom Masala is a delicious and creamy curry from Udupi Cuisine that is perfect for a comforting meal. This vegetarian dish is made with mushrooms cooked in a rich and creamy gravy, flavored with aromatic spices.

Creamy Mushroom Masala (ಅಣ್ಣಾರಿ ಮಸಾಲ)

Ingredients

  • 500g mushrooms, sliced
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup cashew nuts, soaked
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 cup heavy cream
  • 2 tbsp ghee (clarified butter) or oil
  • Fresh coriander leaves for garnish
  • Salt to taste

Instructions

  1. Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a minute. Then, add the pureed tomatoes and cook until the oil separates.
  3. Meanwhile, grind the soaked cashew nuts into a smooth paste.
  4. Add the sliced mushrooms to the pan and cook for 5 minutes.
  5. Now, add the cashew paste, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for another 5 minutes.
  6. Pour in the heavy cream and simmer for 2-3 minutes until the gravy thickens.
  7. Garnish with fresh coriander leaves and serve hot with naan or rice.
