Ingredients
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 8 ounces mushrooms, sliced
- Salt and pepper to taste
Instructions
- In a saucepan, heat the chicken or vegetable broth over low heat.
- In a separate large skillet, heat the olive oil and butter over medium heat. Add the onion and garlic, and sauté until softened.
- Add the Arborio rice to the skillet and stir to coat with the oil and butter. Cook for 2-3 minutes until the rice becomes translucent around the edges.
- Pour in the white wine and cook, stirring constantly, until the wine is fully absorbed.
- Add a ladleful of warm broth to the rice and cook, stirring frequently, until the broth is absorbed. Continue adding the broth, one ladleful at a time, and stirring until the rice is creamy and tender, about 20-25 minutes.
- Stir in the sliced mushrooms and cook for an additional 3-4 minutes, until the mushrooms are tender.
- Remove the skillet from the heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
- Serve the creamy mushroom risotto hot, garnished with additional Parmesan cheese if desired.
