Creamy Mushroom Risotto (Mantarlı Pilav)

Ingredients

  • 2 cups arborio rice
  • 4 cups vegetable broth
  • 1 cup white wine
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.
  2. Add the mushrooms to the pot and cook until they are tender and golden brown.
  3. Stir in the arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly.
  4. Pour in the white wine and cook until it is absorbed by the rice.
  5. Gradually add the vegetable broth, 1 cup at a time, stirring frequently and allowing the liquid to be absorbed before adding more.
  6. Once the rice is tender and creamy, stir in the parmesan cheese, heavy cream, and butter. Season with salt and pepper to taste.
  7. Remove from heat and let the risotto rest for a few minutes before serving.
