Creamy Mushroom Risotto (Mantarlı Pilav)

Ingredients
- 2 cups arborio rice
- 4 cups vegetable broth
- 1 cup white wine
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 cups mushrooms, sliced
- 1/2 cup grated parmesan cheese
- 1/4 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.
- Add the mushrooms to the pot and cook until they are tender and golden brown.
- Stir in the arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly.
- Pour in the white wine and cook until it is absorbed by the rice.
- Gradually add the vegetable broth, 1 cup at a time, stirring frequently and allowing the liquid to be absorbed before adding more.
- Once the rice is tender and creamy, stir in the parmesan cheese, heavy cream, and butter. Season with salt and pepper to taste.
- Remove from heat and let the risotto rest for a few minutes before serving.
