Creamy Mushroom Soup (Ciorbă de Ciuperci)
Ciorbă de Ciuperci is a classic Romanian creamy mushroom soup that is perfect for a cozy night in. This comforting soup is packed with earthy flavors and is sure to warm you up on a chilly evening.
Ingredients
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 500g mushrooms, sliced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the sliced mushrooms to the pot and cook until they release their liquid and become golden brown.
- Pour in the vegetable broth and bring the soup to a simmer. Let it cook for 15-20 minutes.
- Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes.
