Creamy Mushroom Soup (Gobak Çorbası)
Gobak Çorbası, also known as Creamy Mushroom Soup, is a traditional dish from Gagauz cuisine. This rich and flavorful soup is perfect for warming up on a cold day.
Ingredients
- 500g mushrooms, sliced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the onions and garlic, and sauté until softened.
- Add the mushrooms and cook until they release their liquid.
- Pour in the vegetable broth and bring to a simmer.
- Let the soup simmer for 15-20 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Simmer for an additional 5 minutes, then remove from heat.
- Using an immersion blender, blend the soup until smooth.
- Serve hot, garnished with a drizzle of cream and a sprinkle of chopped parsley.
