Fıstıklı Baklava, also known as Creamy Pistachio Baklava, is a traditional dessert from Gagauz cuisine. This rich and sweet pastry is made with layers of phyllo dough, filled with creamy pistachio and sweet syrup, making it a delightful treat for any occasion.

Creamy Pistachio Baklava (Fıstıklı Baklava)

Ingredients

  • 1 package of phyllo dough
  • 1 cup unsalted butter, melted
  • 2 cups shelled pistachios, finely chopped
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 cup water
  • 1 cup granulated sugar
  • 1/2 cup honey
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the chopped pistachios, 1 cup of sugar, and ground cinnamon.
  3. Layer half of the phyllo sheets in a greased baking dish, brushing each sheet with melted butter.
  4. Sprinkle the pistachio mixture evenly over the phyllo layers.
  5. Layer the remaining phyllo sheets on top, brushing each sheet with melted butter.
  6. Cut the baklava into diamond or square shapes using a sharp knife.
  7. Bake in the preheated oven for 45-50 minutes, or until golden brown.
  8. While the baklava is baking, prepare the syrup by combining water, 1 cup sugar, honey, and lemon juice in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes.
  9. Once the baklava is done, remove it from the oven and immediately pour the hot syrup over the hot baklava.
  10. Allow the baklava to cool and absorb the syrup before serving.
