Ingredients
- 2 lbs pumpkin, peeled and cubed
- 1 cup coconut milk
- 2 cloves garlic, minced

- 1 tsp fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- In a large pot, bring water to a boil and add the cubed pumpkin. Cook for 15-20 minutes or until the pumpkin is tender.
- Drain the cooked pumpkin and return it to the pot.
