Creamy Pumpkin Soup (Balkabağı Çorbası)

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and let it simmer for 20 minutes, or until the pumpkin is tender.
  4. Using an immersion blender, puree the soup until smooth.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Simmer for an additional 5 minutes, then remove from heat.
  7. Serve the creamy pumpkin soup hot, garnished with a drizzle of cream and a sprinkle of freshly ground black pepper.
