Creamy Pumpkin Soup (Balkabağı Çorbası)
Balkabağı Çorbası, or Creamy Pumpkin Soup, is a traditional Crimean Tatar dish that is perfect for the fall and winter seasons. This warm and comforting soup is easy to make and packed with delicious flavors.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and let it simmer for 20 minutes, or until the pumpkin is tender.
- Using an immersion blender, puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for an additional 5 minutes, then remove from heat.
- Serve the creamy pumpkin soup hot, garnished with a drizzle of cream and a sprinkle of freshly ground black pepper.
