Creamy Pumpkin Soup (Balqabaq Çorbası)

Ingredients

  • 1 small pumpkin, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  2. Add the cubed pumpkin to the pot and pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 20 minutes, or until the pumpkin is tender.
  3. Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, you can carefully transfer the soup in batches to a blender to puree.
  4. Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes.
  5. Remove from heat and serve hot. Garnish with a drizzle of cream or a sprinkle of pumpkin seeds if desired.
