Creamy Pumpkin Soup (Balqabaq Çorbası)
Balqabaq Çorbası, or Creamy Pumpkin Soup, is a traditional Gagauz cuisine dish that is perfect for the fall season. This velvety and flavorful soup is easy to make and is sure to warm you up on a chilly day.
Ingredients
- 1 small pumpkin, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the cubed pumpkin to the pot and pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 20 minutes, or until the pumpkin is tender.
- Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, you can carefully transfer the soup in batches to a blender to puree.
- Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes.
- Remove from heat and serve hot. Garnish with a drizzle of cream or a sprinkle of pumpkin seeds if desired.
