Creamy Pumpkin Soup (Ciorbă de Dovleac)

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
