Küräş, or Creamy Pumpkin Soup, is a traditional Tatar dish that is perfect for the autumn season. This velvety soup is made with roasted pumpkin, warm spices, and a touch of cream, creating a comforting and flavorful meal.
Ingredients
- 1 small pumpkin, roasted and pureed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- 1/2 cup heavy cream
Instructions
- In a large pot, sauté the chopped onion and minced garlic until softened.
- Add the roasted pumpkin puree, vegetable broth, ground cinnamon, and ground nutmeg to the pot. Season with salt and pepper.
- Simmer the soup for 20-25 minutes, stirring occasionally.
- Stir in the heavy cream and cook for an additional 5 minutes.
- Remove the pot from the heat and let the soup cool slightly.
- Using an immersion blender, blend the soup until smooth and creamy.
- Adjust the seasoning if needed, then serve the soup hot.
