Creamy Pumpkin Soup (Küräş)

Ingredients

  • 1 small pumpkin, roasted and pureed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until softened.
  2. Add the roasted pumpkin puree, vegetable broth, ground cinnamon, and ground nutmeg to the pot. Season with salt and pepper.
  3. Simmer the soup for 20-25 minutes, stirring occasionally.
  4. Stir in the heavy cream and cook for an additional 5 minutes.
  5. Remove the pot from the heat and let the soup cool slightly.
  6. Using an immersion blender, blend the soup until smooth and creamy.
