Creamy Pumpkin Soup (Kürdələr Çorbası)
Kürdələr Çorbası, or Creamy Pumpkin Soup, is a popular dish in Azerbaijani cuisine, especially during the autumn season. This velvety and comforting soup is perfect for warming up on chilly days.
Ingredients
- 500g pumpkin, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened.
- Add the cubed pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the pumpkin is tender.
- Using an immersion blender, puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for an additional 5 minutes, then remove from heat.
- Serve the creamy pumpkin soup hot, garnished with a drizzle of cream and a sprinkle of freshly ground black pepper.
