Creamy Sambar Magic

Ingredients

  • 1 cup toor dal
  • 1 cup mixed vegetables (carrot, drumstick, eggplant, okra)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1/2 cup coconut milk
  • 1 tsp sambar powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 2-3 dry red chilies
  • A few curry leaves
  • 2 tbsp oil
  • Salt to taste

Instructions

  1. Pressure cook the toor dal with the mixed vegetables, turmeric powder, and salt until soft.
  2. Heat oil in a pan and add mustard seeds, cumin seeds, dry red chilies, and curry leaves. Sauté until the seeds crackle.
  3. Add chopped onions and sauté until they turn translucent.
  4. Add chopped tomatoes and cook until they turn mushy.
  5. Add sambar powder and sauté for a minute.
  6. Add the cooked dal and vegetables to the pan. Mix well and let it simmer for 5 minutes.
  7. Pour in the coconut milk and mix well. Simmer for another 5 minutes.
  8. Adjust the seasoning and consistency as needed.
  9. Serve hot with steamed rice or idli.
