Creamy Spinach and Cheese Börek (Ispanaklı Peynirli Börek)
Ispanaklı Peynirli Börek is a delicious savory pastry dish from Crimean Tatar cuisine. It is made with layers of thin dough filled with a creamy spinach and cheese mixture, then baked until golden and crispy.
Ingredients
- 1 package of phyllo dough
- 500g fresh spinach, chopped
- 200g feta cheese, crumbled
- 200g ricotta cheese
- 1 onion, finely chopped
- 2 eggs
- 1/2 cup milk
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, mix together the chopped spinach, feta cheese, ricotta cheese, chopped onion, eggs, milk, olive oil, salt, and pepper.
- Preheat the oven to 180°C (350°F).
- Layer 3 sheets of phyllo dough in a greased baking dish, brushing each sheet with olive oil.
- Spread a layer of the spinach and cheese mixture over the phyllo dough.
- Repeat the layering process with the remaining phyllo dough and spinach and cheese mixture, ending with a layer of phyllo dough on top.
- Brush the top layer of phyllo dough with olive oil.
- Bake in the preheated oven for 45 minutes, or until the börek is golden brown and crispy.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
