Ingredients
- 1 cup mixed vegetables (carrots, beans, peas, potatoes)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1/2 cup grated coconut
- 1 inch ginger, grated
- 2-3 green chilies
- 1/2 cup cashews
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1/2 cup yogurt
- 2 tbsp ghee (clarified butter) or oil
- Few curry leaves
- Salt to taste
Instructions
- Heat ghee in a pan and sauté the onions until they turn golden brown.
- Add the tomatoes and cook until they turn mushy.
- Grind the grated coconut, ginger, green chilies, and cashews into a smooth paste.
- Add the ground paste to the pan and cook for a few minutes.
- Add the mixed vegetables, turmeric powder, and salt. Mix well and cook for 5 minutes.
- Add yogurt and garam masala. Simmer for 10-15 minutes until the vegetables are cooked and the sauce thickens.
- Garnish with curry leaves and serve hot with rice or roti.
