Creamy Vegetable Korma (ತರಕಾರಿ ಕೊರ್ಮಾ)

Ingredients

  • 1 cup mixed vegetables (carrots, beans, peas, potatoes)
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1/2 cup grated coconut
  • 1 inch ginger, grated
  • 2-3 green chilies
  • 1/2 cup cashews
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 cup yogurt
  • 2 tbsp ghee (clarified butter) or oil
  • Few curry leaves
  • Salt to taste

Instructions

  1. Heat ghee in a pan and sauté the onions until they turn golden brown.
  2. Add the tomatoes and cook until they turn mushy.
  3. Grind the grated coconut, ginger, green chilies, and cashews into a smooth paste.
  4. Add the ground paste to the pan and cook for a few minutes.
  5. Add the mixed vegetables, turmeric powder, and salt. Mix well and cook for 5 minutes.
  6. Add yogurt and garam masala. Simmer for 10-15 minutes until the vegetables are cooked and the sauce thickens.
  7. Garnish with curry leaves and serve hot with rice or roti.
