Ingredients
- 4 cups plain yogurt
- 6 cups water or vegetable broth
- 1/2 cup rice
- 2 eggs
- 3 tablespoons all-purpose flour
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh dill
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, whisk together the yogurt, water (or vegetable broth), and flour until smooth.
- Add the rice to the pot and bring the mixture to a gentle boil over medium heat, stirring occasionally.
- In a separate bowl, beat the eggs and gradually add a ladleful of the hot yogurt mixture to the eggs while whisking constantly to temper the eggs.
- Pour the egg mixture back into the pot while stirring constantly to prevent the eggs from curdling.
- Add the chopped mint and dill to the soup, and season with salt and black pepper to taste.
- Simmer the soup for an additional 10-15 minutes, stirring occasionally, until the rice is fully cooked and the soup has thickened slightly.
- Remove the soup from the heat and let it cool slightly before serving.
