Creamy Yogurt and Herb Soup (Yayla Çorbası)

Ingredients

  • 4 cups plain yogurt
  • 6 cups water or vegetable broth
  • 1/2 cup rice
  • 2 eggs
  • 3 tablespoons all-purpose flour
  • 1/2 cup chopped fresh mint
  • 1/2 cup chopped fresh dill
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, whisk together the yogurt, water (or vegetable broth), and flour until smooth.
  2. Add the rice to the pot and bring the mixture to a gentle boil over medium heat, stirring occasionally.
  3. In a separate bowl, beat the eggs and gradually add a ladleful of the hot yogurt mixture to the eggs while whisking constantly to temper the eggs.
  4. Pour the egg mixture back into the pot while stirring constantly to prevent the eggs from curdling.
  5. Add the chopped mint and dill to the soup, and season with salt and black pepper to taste.
  6. Simmer the soup for an additional 10-15 minutes, stirring occasionally, until the rice is fully cooked and the soup has thickened slightly.
  7. Remove the soup from the heat and let it cool slightly before serving.
