Crema Catalana (catalan Creme Brulee)
Crema Catalana, also known as Catalan Creme Brulee, is a traditional dessert from Andorran cuisine. This creamy and rich dessert is similar to creme brulee but with a hint of citrus flavor.
Ingredients
- 6 egg yolks
- 1/2 cup granulated sugar
- 2 cups whole milk
- 1 cinnamon stick
- 1 teaspoon lemon zest
- 1 teaspoon cornstarch
Instructions
- In a bowl, whisk the egg yolks and sugar until well combined.
- In a saucepan, heat the milk, cinnamon stick, and lemon zest over medium heat until it almost boils. Remove from heat and let it sit for 5 minutes.
- In a small bowl, dissolve the cornstarch in 2 tablespoons of the warm milk mixture. Then, slowly pour it into the egg yolk mixture, whisking constantly.
- Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens. This should take about 5-7 minutes.
- Remove the cinnamon stick and pour the mixture into 4 ramekins. Let them cool to room temperature, then refrigerate for at least 2 hours.
- Before serving, sprinkle a thin, even layer of granulated sugar on top of each crema catalana. Caramelize the sugar using a kitchen torch until it forms a crispy top.
