Ingredients

  • 6 egg yolks
  • 1/2 cup granulated sugar
  • 2 cups whole milk
  • 1 cinnamon stick
  • 1 teaspoon lemon zest
  • 1 teaspoon cornstarch

Instructions

  1. In a bowl, whisk the egg yolks and sugar until well combined.
  2. In a saucepan, heat the milk, cinnamon stick, and lemon zest over medium heat until it almost boils. Remove from heat and let it sit for 5 minutes.
  3. In a small bowl, dissolve the cornstarch in 2 tablespoons of the warm milk mixture. Then, slowly pour it into the egg yolk mixture, whisking constantly.
  4. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens. This should take about 5-7 minutes.
  5. Remove the cinnamon stick and pour the mixture into 4 ramekins. Let them cool to room temperature, then refrigerate for at least 2 hours.
  6. Before serving, sprinkle a thin, even layer of granulated sugar on top of each crema catalana. Caramelize the sugar using a kitchen torch until it forms a crispy top.
