Crema De Carbassa (creamy Butternut Squash Bisque)
Crema de Carbassa, or Creamy Butternut Squash Bisque, is a traditional Catalan dish that is perfect for the colder months. This velvety smooth soup is rich and comforting, with a hint of sweetness from the butternut squash.
Ingredients
- 1 butternut squash, peeled, seeded, and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the butternut squash and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the squash is tender.
- Using an immersion blender, purée the soup until smooth. Alternatively, transfer the soup to a blender and purée in batches.
- Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes, then remove from heat.
- Serve the Crema de Carbassa hot, garnished with a drizzle of cream or a sprinkle of fresh herbs.
