Crema De Carbassa (creamy Butternut Squash Bisque)

Ingredients

  • 1 butternut squash, peeled, seeded, and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the butternut squash and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the squash is tender.
  3. Using an immersion blender, purée the soup until smooth. Alternatively, transfer the soup to a blender and purée in batches.
  4. Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes, then remove from heat.
  5. Serve the Crema de Carbassa hot, garnished with a drizzle of cream or a sprinkle of fresh herbs.
