Ingredients
- 1 cup pumpkin puree
- 1 can (14 oz) coconut milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, combine the pumpkin puree, coconut milk, sugar, and salt.
- Cook over medium heat, stirring constantly, until the mixture thickens, about 15-20 minutes.
- Remove from heat and stir in the vanilla extract.
- Pour the custard into serving dishes and refrigerate for at least 2 hours before serving.
