Ingredients

  • 1 can (400ml) coconut milk
  • 1 cup ripe jackfruit, chopped
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, combine the coconut milk, chopped jackfruit, and sugar. Cook over medium heat, stirring occasionally, until the mixture comes to a gentle boil.
  2. In a small bowl, mix the cornstarch with 1/4 cup of water to create a slurry. Slowly pour the slurry into the saucepan while stirring constantly to avoid lumps.
  3. Add the salt and vanilla extract to the mixture and continue to cook, stirring constantly, until the custard thickens to a pudding-like consistency.
  4. Remove the custard from the heat and pour it into individual serving dishes. Let it cool to room temperature, then refrigerate for at least 2 hours before serving.
