Ingredients
- 1 can (400ml) coconut milk
- 1 cup ripe jackfruit, chopped
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, combine the coconut milk, chopped jackfruit, and sugar. Cook over medium heat, stirring occasionally, until the mixture comes to a gentle boil.
- In a small bowl, mix the cornstarch with 1/4 cup of water to create a slurry. Slowly pour the slurry into the saucepan while stirring constantly to avoid lumps.
- Add the salt and vanilla extract to the mixture and continue to cook, stirring constantly, until the custard thickens to a pudding-like consistency.
- Remove the custard from the heat and pour it into individual serving dishes. Let it cool to room temperature, then refrigerate for at least 2 hours before serving.
