Ingredients
- 1 lb (450g) asparagus, trimmed and cut into 1-inch pieces
- 8 oz (225g) pasta of your choice
- 2 tbsp (30g) butter
- 2 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1/2 cup (50g) grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large pot of boiling salted water, cook the asparagus for 2-3 minutes until crisp-tender. Remove with a slotted spoon and set aside.
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute.
- Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes until slightly thickened.
- Stir in the grated Parmesan cheese until melted and smooth.
- Add the cooked asparagus and pasta to the skillet, tossing to coat in the creamy sauce.
- Season with salt and pepper to taste.
- Serve the creamy asparagus pasta hot, garnished with additional Parmesan cheese if desired.
