Cremige Spargelsuppe (creamy Asparagus Soup)
Cremige Spargelsuppe, or Creamy Asparagus Soup, is a classic Viennese dish that is perfect for springtime. This velvety soup is made with fresh asparagus and a touch of cream, creating a luxurious and comforting dish.
Ingredients
- 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
- 3 cups vegetable broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil

- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes, or until the asparagus is tender.
- Using an immersion blender, purée the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return it to the pot.
- Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes, allowing the flavors to meld together.
- Remove from heat and serve the creamy asparagus soup hot, garnished with a drizzle of cream or a sprinkle of chopped fresh herbs if desired.
