Creole Crab Cakes

Ingredients

  • 1 pound lump crabmeat
  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1/4 cup chopped bell pepper
  • 2 green onions, finely chopped
  • 1 egg, beaten
  • 2 cloves garlic, minced
  • 1 tablespoon Creole seasoning
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup vegetable oil for frying

Instructions

  1. In a large bowl, gently combine the crabmeat, breadcrumbs, mayonnaise, bell pepper, green onions, egg, garlic, Creole seasoning, lemon juice, and cayenne pepper.
  2. Form the mixture into 8 crab cakes and place them on a baking sheet lined with parchment paper. Refrigerate for 30 minutes.
  3. Heat the vegetable oil in a large skillet over medium heat. Fry the crab cakes in batches for 3-4 minutes on each side, or until golden brown.
  4. Remove the crab cakes from the skillet and place them on a paper towel-lined plate to drain any excess oil.
