Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb mussels, cleaned and debearded
- 1 lb squid, cleaned and sliced into rings
- 1 cup diced bell peppers
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 2 cups long-grain rice
- 4 cups seafood broth
- 1 teaspoon paprika
- 1 teaspoon saffron threads
- 1 teaspoon thyme
- 1 teaspoon oregano
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a large paella pan, heat some oil over medium heat. Add the shrimp, mussels, and squid, and cook until the seafood is just opaque. Remove the seafood from the pan and set aside.
- In the same pan, sauté the bell peppers, onions, and garlic until softened.
- Add the diced tomatoes, rice, seafood broth, paprika, saffron, thyme, and oregano to the pan. Season with salt and pepper.
- Simmer the paella over medium heat, stirring occasionally, until the rice is tender and has absorbed the liquid, about 20-25 minutes.
- Return the cooked seafood to the pan and gently fold it into the rice mixture.
- Remove the paella from the heat and let it rest for a few minutes before serving with lemon wedges.
