Creole Style Beef Empanadas

Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp dried thyme
  • 1/2 cup tomato sauce
  • Salt and pepper to taste
  • 2 sheets of store-bought pie crust
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Add the onion, garlic, and bell pepper, and cook until the vegetables are soft.
  2. Stir in the paprika, cayenne pepper, thyme, and tomato sauce. Season with salt and pepper to taste. Remove from heat and let the filling cool.
  3. Preheat the oven to 375°F (190°C). Roll out the pie crust and cut out circles using a round cutter or a small plate as a guide.
  4. Place a spoonful of the beef filling in the center of each circle. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
  5. Brush the empanadas with the beaten egg to create a golden crust. Place them on a baking sheet and bake for 20-25 minutes, or until the crust is golden brown.
  6. Let the empanadas cool for a few minutes before serving. Enjoy!
