Ingredients
- 1 whole chicken, cut into pieces
- 1 pound Andouille sausage, sliced

- 1/2 cup vegetable oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour to make a roux, stirring constantly until it turns a dark brown color.
- Add the onion, bell pepper, celery, and garlic to the pot, and cook until the vegetables are tender.
- Add the chicken pieces and Andouille sausage to the pot, and cook until the chicken is browned on all sides.
- Pour in the chicken broth and diced tomatoes, and add the bay leaves, thyme, smoked paprika, cayenne pepper, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour, stirring occasionally.
- Remove the bay leaves and skim off any fat that rises to the surface. Serve the gumbo over cooked rice.
