Creole Style Crab Soup

Ingredients

  • 1 lb fresh crab meat
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 1 cup okra, sliced
  • 4 cups seafood or chicken broth
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • Hot sauce, to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, and bell pepper, and sauté until softened.
  3. Add the tomatoes, okra, and crab meat, and cook for 5 minutes.
  4. Pour in the broth, thyme, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Season with hot sauce to taste.
  6. Serve hot and enjoy!
