Creole Style Eggplant Parmesan is a delicious and flavorful dish that combines the rich flavors of Martinican cuisine with the classic Italian favorite. This recipe adds a unique twist to the traditional eggplant parmesan by incorporating Creole spices and ingredients.
Ingredients
- 2 large eggplants, sliced into 1/2 inch rounds
- 1 cup all-purpose flour
- 3 eggs, beaten
- 2 cups breadcrumbs
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Creole seasoning
- Vegetable oil for frying
Instructions
- In a shallow dish, combine the flour with Creole seasoning, salt, and pepper.
- In another dish, beat the eggs with a little water.
- In a third dish, mix the breadcrumbs with the grated Parmesan cheese.
- Dredge the eggplant slices in the seasoned flour, then dip in the egg mixture, and finally coat with the breadcrumb mixture.
- Heat the vegetable oil in a large skillet over medium heat. Fry the breaded eggplant slices until golden brown on both sides. Remove and drain on paper towels.
- Preheat the oven to 375°F (190°C).
- In a baking dish, spread a thin layer of marinara sauce. Arrange a layer of fried eggplant slices on top of the sauce. Sprinkle with mozzarella cheese and chopped parsley. Repeat the layers, finishing with a layer of marinara sauce and mozzarella cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let the Creole Style Eggplant Parmesan cool for a few minutes before serving. Garnish with additional chopped parsley if desired.
