Ingredients
- 2 large eggplants, sliced into rounds
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 2 eggs, beaten
- 1 cup tomato sauce
- 1 teaspoon Creole seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In one bowl, mix the breadcrumbs with half of the Parmesan cheese. In another bowl, beat the eggs.
- Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb and Parmesan mixture.
- Heat the olive oil in a large skillet over medium heat. Cook the breaded eggplant slices until golden brown on both sides.
- Spread a thin layer of tomato sauce in the bottom of a baking dish. Arrange the cooked eggplant slices in the dish, overlapping slightly.
- Season the eggplant with Creole seasoning, garlic powder, onion powder, salt, and pepper. Top with the remaining Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is golden and bubbly.
