Creole-style Shrimp And Grits
Creole-style Shrimp and Grits is a classic dish from Saint Lucian cuisine that combines the flavors of the Caribbean with a Southern favorite. This hearty and flavorful meal is perfect for breakfast, brunch, or dinner.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup stone-ground grits
- 4 cups water
- 1 cup coconut milk
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons cooking oil
Instructions
- In a large pot, bring the water to a boil. Gradually whisk in the grits and reduce the heat to low. Cook, stirring occasionally, for about 20-25 minutes or until the grits are thick and creamy.
- While the grits are cooking, heat the cooking oil in a skillet over medium heat. Add the chopped onion, bell pepper, and garlic. Cook until the vegetables are soft, about 5 minutes.
- Add the shrimp to the skillet and season with thyme, paprika, cayenne pepper, salt, and pepper. Cook for 3-4 minutes, or until the shrimp are pink and opaque.
- Pour in the coconut milk and simmer for an additional 2-3 minutes, allowing the flavors to meld together.
- Divide the creamy grits among serving bowls and top with the Creole-style shrimp mixture.
