Ingredients
- 4 large bell peppers
- 1 cup cooked rice
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 tsp paprika
- 1/2 tsp thyme
- Salt and pepper to taste
- 1/2 cup shredded cheese
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, brown the ground beef with the diced onion and minced garlic. Drain any excess fat.
- Add the cooked rice, diced tomatoes, paprika, thyme, salt, and pepper to the skillet. Cook for 5 minutes, stirring occasionally.
- Stuff the bell peppers with the beef and rice mixture, then place them in a baking dish.
- Sprinkle the shredded cheese on top of the stuffed peppers.
- Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly.
