Creole-style Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp paprika
  • 1/2 tsp thyme
  • Salt and pepper to taste
  • 1/2 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, brown the ground beef with the diced onion and minced garlic. Drain any excess fat.
  4. Add the cooked rice, diced tomatoes, paprika, thyme, salt, and pepper to the skillet. Cook for 5 minutes, stirring occasionally.
  5. Stuff the bell peppers with the beef and rice mixture, then place them in a baking dish.
  6. Sprinkle the shredded cheese on top of the stuffed peppers.
  7. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly.
